Parmesan Garlic Potato Foil Packets

Ingredients

2 pounds red potatoes, cut into 1 inch pieces
2 tablespoons olive oil
½ cup grated Parmesan cheese
3 minced garlic cloves
1 tablespoon Italian seasoning
¼ teaspoon salt
¼ teaspoon pepper
aluminum foil
chopped parsley for garnish
freshly grated Parmesan cheese

Directions

In a large bowl add 2 pounds red potatoes, cut into 1 inch pieces , 2 tablespoons olive oil, ½ cup grated Parmesan cheese, 3 minced garlic cloves, 1 tablespoon Italian seasoning, ¼ teaspoon salt and ¼ teaspoon pepper. Toss until coated.

On a sheet of aluminum foil add the potatoes. Fold in the sides to create a foil pack and seal the edges. Place on the grill on medium high heat and grill for 20-30 minutes or until tender.

Top with chopped parsley for garnish and freshly grated Parmesan cheese.
