Queso Burgers
Ingredients
1 ½ pounds lean ground beef
1 pound easy melt cheese, like Velveeta, cut into ½-inch cubes
1 (10-ounce) can Rotel Diced Tomatoes & Green Chilies, undrained
6 hamburger buns
6 pieces leaf lettuce
1 large tomato, cut into 6 slices
Directions
Melt the cheese and diced tomatoes in a medium saucepan over low heat, stirring frequently.
Shape the ground beef into 6 burger patties and season them with salt and pepper.
Heat a grill to 300 degrees Fahrenheit, or a skillet over medium-high heat on the stove. Cook the burgers for 4-5 minutes on each side, or until they are no longer pink.
To assemble the burgers, place a cooked patty on a bottom bun and top with 2 tablespoons of melted cheese and tomatoes. Top with the lettuce, sliced tomato, and top bun, and enjoy!
