Cajun Shrimp and Sausage Vegetable Foil Packets
Ingredients
1 pound large peeled and deveined shrimp
14 ounces sliced pork or chicken sausage
2 medium-sized sliced zucchini
2 medium-sized sliced yellow squash
½ chopped bunch asparagus
2 chopped red bell pepper
salt and pepper
3 tablespoons olive oil
3 tablespoons Cajun seasoning
Directions
In a large bowl add the 1 pound large peeled and deveined shrimp, 14 ounces sliced pork or chicken sausage, 2 medium-sized sliced zucchini, 2 medium-sized sliced yellow squash, ½ chopped bunch asparagus, 2 chopped red bell pepper, and salt and pepper. Add 3 tablespoons olive oil and 3 tablespoons Cajun seasoning and toss until coated.
Place four 18×12-inch pieces of heavy aluminum foil on the counter. Place the shrimp and sausage mixture in the center of the foil. Double-fold the top and ends of each piece of foil, leaving space for steam to gather.
Grill or bake the packets at 400 degrees for 15-20 minutes or until shrimp and vegetables are cooked through. Carefully open packets and serve.
