Mediterranean Grilled Chicken Kofta with Garlic Yogurt Sauce
Ingredients
1 piece sliced sandwich bread
1 lb ground chicken
1 small onion, chopped fine
1 garlic clove, minced
1 egg
1/2 cup chopped fresh parsley
3 tbsp chopped fresh mint
1 tsp ground coriander
1/2 tsp each sweet paprika, ground allspice, ground cumin, ground cardamom
1/2 tsp each salt & pepper
1/4 teaspoon red pepper flakes or 1/4 teaspoon cayenne pepper (optional)
Directions
Toast the bread until golden brown. Place it in a small bowl and cover with water. Let it sit until tender then squeeze the bread to wring out all the water.
Place the bread in a large mixing bowl. Add the ground chicken, onion, garlic, fresh parsley, mint, spices, and salt and pepper. Add the egg and a drizzle of extra virgin olive oil. Using clean hands, mix the chicken mixture until everything is well combined.
Use your hands to form elongated patties about 1 to 1 & 1/2-inch in thickness, then push the skewer through each of the patties. Place the kabobs on a tray or large plate and refrigerate for 15 to 20 minutes
Grease the grates of a gas grill with a little bit of oil and heat to medium-high. Place the kabobs on the grill and cook for 4 to 5 minutes per side until fully cooked through.
Garlic Yogurt Sauce:
1/2 cup plain unsweetened yogurt
1 clove garlic – finely minced
1 tablespoon finely minced parsley leaves
zest of 1 lemon
1 tablespoon lemon juice
1/4 teaspoon each salt & pepper
Combine all the ingredients in a small bowl and mix well. Drizzle over the chicken kofta kebabs to serve.
